What is Celiac Disease?

Celiac Disease, also known as Celiac Sprue, Nontropical Sprue and Gluten-Sensitive Enteropathy (GSE), is a digestive condition triggered by consumption of the protein Gluten. It appears to be genetically determined.  Gluten is a protein found in all forms of wheat (including durum, semolina, and spelt), rye, oats, barley and related grain hybrids such as triticale and kamut. Mostly found in bread, pasta, cookies, pizza crust and other foods containing wheat, barley or rye. Oats may contain gluten as well.

When people with celiac disease consume foods containing gluten, an immune reaction occurs in the small intestine, resulting in damage to the surface of the small intestine and an inability to absorb many important nutrients. The only treatment for Celiac Disease is the lifelong adherence to a Gluten Free diet.  Adapting to the Gluten Free diet requires some lifestyle changes.  It is very important to read labels, and to learn how to identify ingredients that may contain hidden gluten.

At Omni Foods we understand that more and more people are switching to a Gluten-Free diet for medical reasons as well as lifestyle choices.  We will continue to expand this category as more products become available.  Currently we carry items such as bread & cake mixes, snacks, ready-made breads, muffins, cereals and even some desserts.  Not all items can be found in all locations, but are available by request.
